The Harvest
The weather during the growing season and
harvest in 2021 were ideal, with moderate temperatures throughout the region.
The grapes were harvested on September 3rd, with a sugar content of
20.6 Brix.
Winemaking
The grapes were whole-cluster pressed and settled in a tank for 24
hours. The juice was racked to stainless-steel drums to undergo fermentation. Once
fermentation was complete, the wine was racked from and returned to
stainless-steel drums for aging. The wine was bottled in early May, 2022.
The Wine
The wine has a medium-gold color. The aromas are a mixture of tropical
fruit, fresh bananas, and papayas. On the palate the wine has flavors of Golden
Delicious apples, Bananas Foster, with hints of brown spices in the background.
The wine has a long, refreshing finish provided by the excellent acidity
Food Pairings
This wine will pair well with a variety of seafood, including
scallops, sea bass and also Chicken Piccata. Serve this wine chilled.
